Skip the iceberg lettuce and go for the dark leafy greens on your next trip to the salad bar.

Turns out the vitamin K in greens like kale and spinach may reduce your chances of developing insulin resistance -- a major risk factor for diabetes.

Keep Insulin on the Job
In a study, people who took vitamin K supplements for 36 months had lower blood levels of insulin and experienced improved insulin resistance compared with an unsupplemented control group. Contrary to other studies, only the men benefitted from K -- possibly because more of the women were overweight or obese. These conditions contribute significantly to insulin resistance and diminish the body’s response to vitamin K. Get the nitty-gritty on how body fat -- especially around your belly -- can lead to insulin resistance.

How does vitamin K boost insulin function? The researchers aren’t quite sure, but they suspect it helps quench inflammation, for one. And although more research is needed to confirm the study’s findings, you can’t go wrong eating dark leafy greens and other vitamin K-packed foods, since they boost your health in numerous other ways (like these). But if you are on a blood thinner, such as warfarin, talk to your doctor before increasing your vitamin K intake.

Hey Katyzzz that was a great article as it pertains to many of my relatives it seems diabetes runs in my family. When I was a kid I had a ruptured blood vessel in my nose, I had to have it packed, and they also gave Vitamin K shots to help clot my blood.

I have a cousin that can't eat leafy green veggies, because he has thick blood, and is on shots to thin it down.

Ginger, pineapple juice and green capsicum are excellent blood thinners, but best speak with the doctor first and hope that he/she knows what he/she is doing.

Good to hear Vitamin K is in leafy vegetables. When I was a kid liver was the only known source. Liver isn't one of the healthiest foods but I liked it as a kid!

It is a healthy food except for those with certain conditions but for others, 'everything in moderation, they even give it raw for some conditions

Katyzzz, all the leafy green vegetables are the good sources of Vitamin K. According to the dietitians, 10 grams of parsley contains 153% of the daily recommended amount of Vitamin K!

So, there's no excuse, where we couldn't get adequate Vitamin K in our daily dietary.

s great news Wilson, but there may be many people who need more, people like me for instance, I like parsley but I only have it occasionally, spinach more oftern, and I'm wondering how many spoons of parsley are contained in 10 grams, it sounds a lot may may not actually be so.
