2008-05-23 00:34:08 - As baby boomers age, finding a cure for Alzheimer's is the Holy Grail. New research suggests one surprising possibility -- celery water.
An apple a day may keep the doctor away, but a glass of celery water will keep your brain working and fight off Alzheimer's disease.
That's the clear implication of new research that shows that when mice drank celery water, their brains resisted bacterial attack better than mice who didn't get the juice.
This wasn't junk science - it was
published in the highly respected Proceedings of the National Academy of Sciences (May 27, 2008 issue). The work was performed by Rodney W. Johnson, an associate professor at the University of Illinois at Urbana-Champaign's department of animal sciences.
Celery is loaded with a substance called luteolin, a powerful antioxidant that apparently has the power to block inflammation of the brain.
This ground-breaking research suggests that the luteolin in celery can counter diseases like Alzheimer's, which cause memory loss, progressive brain deterioration, and death. The scientists say that sufferers of multiple sclerosis and Creutzfeldt-Jacob Disease (CJD) may also benefit from celery's natural ingredient.
The work focused on how luteolin acted on immune system cells in the brain called microlegia. When the celery extract was mixed into the drinking water of mice, it reduced inflammation in the brain triggered by a bacterial toxin. The luteolin blocked biological signals which would normally have led to inflammation.
In their journal article, the researchers said, "Luteolin is a promising agent for preventing and treating neuro-inflammation ... and may be useful for mitigating a dysregulated linkage between the immune system and the brain."
Celery is available year-round and is a fine source of low-calorie fiber and highly beneficial vitamin C.

That seems an awful lot of juice of one kind, to me. I think it would perhaps require a bunch of celery to produce that much. Maybe more.
